  • 2 cups All-Purpose Flour
  • 1 cup Brown Sugar
  • 1 large Egg
  • 1 teaspoon Vanilla Extract
  • 2 teaspoons Pumpkin Pie Spice
  • 1 teaspoon Baking Soda
  • 1 cup Semi-Sweet Chocolate Chips
  • 1/2 cup Brown Butter

Instructions

  1. Prepare the Brown Butter by melting unsalted butter over medium heat until it turns a deep golden brown.
  2. Mix the Wet Ingredients: In the bowl with brown butter, add brown sugar, egg, and vanilla extract and mix until creamy.
  3. Combine the Pumpkin by stirring in pumpkin puree.
  4. Whisk the Dry Ingredients: In another bowl, whisk flour, pumpkin pie spice, and baking soda together.
  5. Gradually Combine dry mixture with wet ingredients, stirring gently.
  6. Add the Chocolate Chips by folding them into the dough.
  7. Chill the Dough in the refrigerator for at least 30 minutes.
  8. Preheat the Oven to 350°F (175°C) and prepare a baking sheet.
  9. Scoop & Bake the cookies for 10-12 minutes until edges are golden.
  10. Cool & Enjoy the cookies after letting them cool for 5 minutes on the baking sheet.

Notes

For best texture, chill the dough before baking. Enjoy paired with hot apple cider or a scoop of vanilla ice cream.
