  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried oregano or mixed herbs
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 23 medium potatoes, cut into bite-sized chunks
  • 2 tablespoons olive oil (divided)
  • 500 grams lean beef mince
  • Lettuce (shredded)
  • Cheese (dairy-free or regular)
  • Pickle slices
  • 4 tablespoons mayonnaise
  • 1 tablespoon ketchup
  • 1 teaspoon mustard (Dijon or yellow)
  • 1 teaspoon pickle juice
  • ½ teaspoon garlic powder
  • ½ teaspoon smoked paprika

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Prepare the potatoes by washing and chopping them into bite-sized pieces, then toss with olive oil, smoked paprika, salt, and black pepper.
  3. Spread the potatoes on a baking sheet and bake for 25-30 minutes, turning halfway.
  4. Cook the beef in a skillet with the remaining olive oil, adding garlic powder, onion powder, oregano, and salt until fully browned (8-10 mins).
  5. Mix together mayonnaise, ketchup, mustard, pickle juice, garlic powder, and smoked paprika to create the sauce.
  6. Assemble the bowls with a base of lettuce, followed by beef, crispy potatoes, and toppings of choice.
  7. Serve up your bowls with garnishes like cheese and pickles.
