Caramel Apple Cheesecake Bars

Delicious bars combining the flavors of caramel and apple in a creamy cheesecake, perfect for fall.

  • 1 1/2 cups graham cracker crumbs
  • 1/3 cup sugar
  • 1/2 cup unsalted butter, melted
  • 2 packages (8 oz each) cream cheese, softened
  • 1 cup sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups apples, peeled and diced
  • 1 cup caramel sauce
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. In a mixing bowl, combine the graham cracker crumbs, sugar, and melted butter. Press the mixture into a greased 9 x 13 inch baking pan.
  3. Pop the pan into the oven and bake for about 10 minutes until it’s golden.
  4. While the crust cools, beat the softened cream cheese until smooth.
  5. Add in the sugar, eggs, and vanilla extract, mixing until just combined.
  6. Gently fold in the diced apples, cinnamon, and nutmeg.
  7. Pour the cream cheese mixture over your baked crust, spreading it out evenly.
  8. Return the pan to the oven and bake for about 30-35 minutes, or until set.
  9. Once baked, allow the pan to cool to room temperature.
  10. Transfer to the fridge for at least 4 hours (or overnight).
  11. When ready to serve, slice into bars and drizzle with the remaining caramel sauce.

Notes

Chilling the bars overnight improves texture. Feel free to add extra toppings like crushed nuts or whipped cream.
