Cheeseburger Soup

A cozy and creamy take on the classic flavors of a cheeseburger, perfect for chilly days.

  • 2 cups russet potatoes, diced
  • 1 cup carrots, shredded
  • 1 cup cheddar cheese, shredded
  • 2 cups whole milk
  • 4 cups beef broth
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper to taste
  • 1 tbsp Worcestershire sauce
  • Olive oil for sautéing

Instructions

  1. Sauté the ground beef with olive oil over medium-high heat until browned, about 5-7 minutes.
  2. Add diced potatoes and shredded carrots, stirring to coat.
  3. Pour in the beef broth, simmering for 15 minutes until potatoes are tender.
  4. Season with garlic powder, onion powder, salt, pepper, and Worcestershire sauce.
  5. Stir in the milk and cheddar cheese until melted and creamy.
  6. Taste and adjust seasonings as desired.
  7. Serve in bowls, garnished with additional cheese and toppings if desired.
