Chewy Pumpkin Chocolate Chip Cookies

Deliciously chewy pumpkin chocolate chip cookies, perfect for fall and sharing with friends.

  • 1 cup pumpkin puree
  • 2 cups all-purpose flour
  • 1 cup brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon pumpkin pie spice
  • 1 teaspoon baking soda
  • 1 cup semi-sweet chocolate chips
  • 1 egg yolk

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Prepare your baking sheet by lining it with parchment paper.
  3. Mix the wet ingredients: pumpkin puree, egg, egg yolk, brown sugar, and vanilla extract until fluffy.
  4. Sift the dry ingredients: flour, pumpkin pie spice, and baking soda in a separate bowl.
  5. Combine the dry ingredients with the wet ingredients until just mixed.
  6. Fold in the chocolate chips gently.
  7. Scoop rounded tablespoons of dough onto the prepared baking sheet, spaced about 2 inches apart.
  8. Bake for 10-12 minutes until edges are golden and a toothpick comes out with moist crumbs.
  9. Cool for 5 minutes on the baking sheet before transferring to a wire rack.

Notes

Store leftover cookies in an airtight container at room temperature for up to a week. For a vegan option, use flax eggs and dairy-free chocolate chips.
