  • 2 large potatoes, peeled and diced (Yukon Golds work best)
  • 1 cup heavy cream (or half-and-half/coconut milk for a lighter option)
  • 2 tablespoons butter
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth (preferably low-sodium)
  • Seasonings: salt, pepper, thyme, cayenne pepper
  • Optional toppings: fresh parsley, chives, crispy bacon

Instructions

  1. Prep the chicken: Cook your chicken by boiling it in salted water until thoroughly cooked (about 15-20 minutes). Shred and set aside.
  2. Sauté the base: Melt the butter in a large pot over medium heat and sauté the chopped onion for about 5 minutes.
  3. Add garlic: Toss in the minced garlic and sauté for a minute.
  4. Incorporate the potatoes: Stir in the diced potatoes, shredded chicken, corn, and chicken broth.
  5. Season it up: Add salt, pepper, thyme, and cayenne, stirring well to combine.
  6. Simmer: Let the mixture come to a gentle boil, then simmer until the potatoes are tender (about 15-20 minutes).
  7. Add the cream: Stir in heavy cream and warm through without boiling again.
  8. Taste and adjust: Check the seasoning and make any necessary adjustments.
  9. Serve: Ladle the chowder into bowls and top with your choice of garnishes.

Notes

This chowder can be made ahead of time and stores beautifully in the fridge for 3-4 days. For a thick chowder, you can mash some potatoes or use a cornstarch slurry.
