Chicken Wild Rice Bowl

A wholesome and hearty Chicken Wild Rice Bowl with vibrant greens, earthy wild rice, and juicy chicken, perfect for cozy dinners.

  • 1 pound Chicken Breast
  • 1 cup Wild Rice
  • 8 oz Mushrooms (cremini recommended)
  • 3 cups Spinach (fresh or frozen)
  • 2 cups Chicken Broth
  • 2 tablespoons Olive Oil
  • 3 cloves Garlic (minced)
  • Seasonings: Salt, Pepper, Thyme, Paprika

Instructions

  1. Rinse the wild rice under cold water. In a medium saucepan, combine the rice and broth, bring to a boil, then reduce heat, cover, and simmer for about 45 minutes.
  2. Heat a tablespoon of olive oil in a skillet over medium-high heat. Season chicken with salt, pepper, and paprika, then cook for 6-7 minutes on each side until golden brown.
  3. Add more olive oil if needed, then sauté minced garlic and mushrooms until golden. Stir in spinach until wilted.
  4. Fluff the cooked wild rice and combine it with the mushroom and spinach mixture. Chop chicken and gently fold it in.
  5. Plate the bowl generously and garnish with fresh herbs.

Notes

For extra juicy chicken, marinate overnight with lemon juice and olive oil. Leftover wild rice works great in this recipe.
