  • 1 (15-ounce/425g) can chickpeas, drained and rinsed
  • 1 avocado, pitted and diced
  • 4 ounces/115g feta cheese, crumbled
  • 1/2 cup/75g red onion, thinly sliced
  • 1/2 cup/50g fresh parsley, chopped
  • 1/4 cup/25g fresh mint, chopped
  • 3 tablespoons/45ml olive oil
  • 2 tablespoons/30ml lemon juice, freshly squeezed
  • 1 clove garlic, minced
  • 1/2 teaspoon/2.5ml dried oregano
  • Salt and pepper to taste

Instructions

  1. Start by gathering all your ingredients. Drain and rinse the chickpeas under cold water.
  2. Dice your avocado, thinly slice the red onion, and chop the parsley and mint.
  3. Combine the chickpeas, avocado, feta cheese, red onion, parsley, and mint in a large bowl.
  4. Whisk together the olive oil, lemon juice, garlic, oregano, salt, and pepper in a separate small bowl.
  5. Drizzle the dressing over the salad and gently toss to combine.
  6. Taste the salad and adjust seasoning as needed.
  7. Serve immediately or let it chill in the fridge for about 30 minutes before serving.

Notes

For added flavor, consider chilling the salad before serving. You can also include additional ingredients like cherry tomatoes or quinoa for a twist.
