Cozy Cider Braised Pot Roast with Caramelized Onions & Cauliflower Rice

A comforting pot roast braised in hard cider, served over fluffy cauliflower rice with caramelized onions, capturing the essence of autumn.

  • 34 pounds beef chuck roast
  • 2 cups hard cider
  • 2 large onions, thinly sliced
  • 3 cloves garlic, minced
  • 4 sprigs fresh thyme
  • 2 bay leaves
  • Salt and pepper, to taste
  • 1 head of cauliflower, riced
  • 2 tablespoons olive oil

Instructions

  1. Prepare the roast: Season the beef chuck roast generously with salt and pepper on all sides.
  2. Sear the meat: In a large pot or Dutch oven, heat the olive oil over medium-high heat. Add the roast and sear for about 4–5 minutes on each side.
  3. Sauté the onions: Remove the roast and add the sliced onions, sautéing for about 10–15 minutes until caramelized.
  4. Deglaze with cider: Add the minced garlic and stir for one minute, then pour in the hard cider.
  5. Add aromatics: Return the roast to the pot and nestle it among the onions. Toss in the thyme and bay leaves.
  6. Braise away: Bring to a gentle simmer, cover, and reduce heat to low for 3–4 hours.
  7. Prepare cauliflower rice: 15 minutes before roast is done, sauté riced cauliflower in olive oil for 5–7 minutes.
  8. Serve it up: Once the roast is tender, shred it and serve over the cauliflower rice.

Notes

For added depth, consider using roasted garlic and don’t skip the searing step!
