Cinnamon Roll Muffins

  • 2 large eggs

  • 1/2 cup brown sugar
  • 1 tablespoon ground cinnamon
  • 1/2 cup powdered sugar
  • 2 tablespoons cream cheese, softened
  • 12 tablespoons milk (for glaze)

Instructions

  1. Preheat the oven to 375°F (190°C) and prepare a muffin tin.
  2. Mix together the all-purpose flour, granulated sugar, baking powder, and salt in a bowl.
  3. Combine the melted butter, milk, eggs, and vanilla extract in another bowl.
  4. Merge the wet ingredients into the dry ingredients gently until just combined.
  5. Prepare the cinnamon filling by mixing brown sugar and ground cinnamon in a small bowl.
  6. Fill the muffin tin with batter, add a layer of cinnamon filling, and top with more batter.
  7. Bake for 15-20 minutes or until golden brown and a toothpick comes out clean.
  8. Make the glaze by mixing powdered sugar, cream cheese, and milk until smooth.
  9. Glaze the muffins after cooling for 5-10 minutes.
