Classic Stuffed Peppers

Hearty and delicious stuffed bell peppers filled with meat, rice, and spices, all baked to perfection.

Ingredients

  • 4 Bell Peppers
  • 1 Pound Ground Beef or Turkey
  • 1 Cup Cooked Rice
  • 1 Can Diced Tomatoes
  • 1 Onion, Chopped
  • 2 Cloves Garlic, Minced
  • 1 Teaspoon Italian Seasoning
  • Salt and Pepper, to Taste
  • 1 Cup Shredded Cheese (Optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Prepare the bell peppers by slicing the tops off and removing the seeds and membranes.
  3. Cook the filling in a large skillet with olive oil, sautéing onion and garlic until translucent.
  4. Add the ground meat and cook until browned, then drain excess fat.
  5. Stir in the cooked rice, diced tomatoes, Italian seasoning, salt, and pepper, allowing to simmer for 5 minutes.
  6. Stuff the prepared peppers with the filling.
  7. Top with shredded cheese if desired.
  8. Bake covered for 30 minutes, then uncover and bake an additional 10-15 minutes until cheese is bubbly and peppers are tender.
  9. Let rest before serving.

Notes

For added flavor, you can use fire-roasted canned tomatoes and try various herbs in the filling.
