Papas Rellenas

Papas Rellenas are savory Colombian meat-stuffed potatoes that bring warmth and nostalgia to the table, perfect for sharing with family and friends.

Ingredients

  • 400 g (14 oz) Ground meat (beef, pork, chicken, or turkey)
  • 1 Onion, cut into cubes
  • 2 Garlic cloves, minced
  • 2 tbsp Tomato paste
  • 1 Hard-boiled egg (optional), chopped
  • 1 tbsp Olive oil
  • 1 tsp Cumin
  • 1 tsp Oregano
  • ½ tsp Thyme
  • Salt and pepper to taste
  • 5 big Potatoes (500 g)
  • 2 Eggs
  • ¼ cup All-purpose flour
  • Oil to fry (canola or vegetable)

Instructions

  1. Prepare the potatoes by washing, peeling, and cutting them into large chunks, then simmer in salted water until fork-tender (15-20 minutes).
  2. Make the meat filling by heating olive oil in a skillet, adding onions, sautéing until soft, then adding garlic for an additional minute.
  3. Brown the meat, breaking it up as it cooks, adding spices and tomato paste, and allowing to cook for 5 minutes. If using, mix in hard-boiled eggs.
  4. Mash the cooked potatoes until smooth, mix in salt, and let cool slightly.
  5. Form the papas rellenas by flattening mashed potatoes, adding meat filling, and shaping into balls or ovals.
  6. Coat the papas in flour, dip in egg wash, and roll in breadcrumbs (if using).
  7. Fry in hot oil over medium-high heat until golden brown on all sides (3-4 minutes per side).
  8. Drain on paper towels and season lightly with salt while warm.

Notes

Serve with fresh herbs and ají sauce for an extra kick. Feel free to experiment with ingredients for different variations.
