Pumpkin Sea Salt Chocolate Chip Cookies

Warm, gooey cookies infused with pumpkin and topped with flaky sea salt, perfect for fall.

  • 1 cup Pumpkin Puree
  • 2 cups All-Purpose Flour
  • 1 cup Brown Sugar
  • 1 Egg (or Flax Egg)
  • 1 tsp Vanilla Extract
  • 1 tsp Pumpkin Pie Spice
  • 1 tsp Baking Soda
  • 1 cup Semi-Sweet Chocolate Chips
  • Flaky Sea Salt, for sprinkling

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Mix the pumpkin puree, brown sugar, egg, and vanilla extract in a large mixing bowl until smooth.
  3. Combine flour, pumpkin pie spice, and baking soda in another bowl.
  4. Blend the dry mixture gradually into the wet ingredients, stirring gently.
  5. Fold in the semi-sweet chocolate chips until evenly distributed.
  6. Scoop dollops of the cookie dough onto a lined baking sheet.
  7. Sprinkle flaky sea salt on top of each cookie before baking.
  8. Bake for 12-15 minutes or until edges are lightly golden.
  9. Cool on the baking sheet for 5 minutes, then transfer to a wire rack.

Notes

For a vegan version, substitute the egg with a flax egg and use dairy-free chocolate chips.
