Creamy Carrot Ginger Soup

A vibrant, flavorful soup that combines the sweetness of carrots with the warmth of ginger for a comforting bowl of goodness.

  • 1 pound Carrots, peeled and chopped
  • 1 tablespoon Fresh Ginger, grated
  • 1 cup Heavy Cream
  • Salt, to taste
  • 1/2 teaspoon Black Pepper, freshly cracked
  • 4 cups Vegetable Broth
  • 1 medium Onion, diced
  • 2 cloves Garlic, minced

Instructions

  1. Prep Your Vegetables: Start by peeling and chopping your carrots, dicing your onion, and mincing your garlic.
  2. Sauté the Aromatics: In a large pot, heat 2 tablespoons of olive oil over medium heat. Add the diced onion and a pinch of salt, cooking until translucent (about 5 minutes).
  3. Add Garlic and Ginger: Toss in the minced garlic and grated ginger, stirring for an additional minute until fragrant.
  4. Cook the Carrots: Now, add your chopped carrots into the pot and stir to combine. Cook for another 5 minutes.
  5. Pour in Broth: Pour in the vegetable broth, ensure all veggies are submerged. Bring to a gentle simmer and let it bubble for about 20 minutes.
  6. Blend It Up: Remove the pot from the heat and let it cool slightly. Use an immersion blender to puree right in the pot or transfer in batches to a blender.
  7. Stir in the Cream: Return the blended soup to the pot and stir in the heavy cream. Warm through on low heat for just a few minutes.
  8. Season to Taste: Taste and adjust the seasoning with salt and pepper as needed.

Notes

This soup freezes beautifully and can be made in a slow cooker as well.
