Creamy Cauliflower Soup

A comforting and velvety creamy cauliflower soup that delivers a luxurious texture using simple ingredients.

  • 1 medium cauliflower (about 1 pound)
  • 1 large onion, diced
  • 23 cloves of garlic, minced
  • 2 cups vegetable or chicken broth
  • 1 cup heavy cream (or coconut milk for a dairy-free option)
  • Salt and pepper, to taste
  • Optional toppings: Fresh herbs, a drizzle of olive oil, or croutons

Instructions

  1. Chop the cauliflower into bite-sized florets, dice the onion, and mince the garlic.
  2. Heat a large pot over medium heat and add a splash of olive oil. Once it shimmers, toss in the diced onion. Sauté for about 5 minutes until translucent.
  3. Add the minced garlic and sauté for an additional minute until fragrant. Then, stir in the cauliflower florets and cook for another 5 minutes.
  4. Pour in the vegetable or chicken broth to the pot and bring the mixture to a gentle boil. Lower the heat and let it simmer for about 15 minutes or until the cauliflower is tender.
  5. Transfer the mixture to a blender and blend until you achieve a smooth consistency. Return to the pot after blending.
  6. Pour in the heavy cream and stir well. Allow the soup to heat through on low heat and season with salt and pepper to taste.
  7. Serve the creamy cauliflower soup hot, topped with a drizzle of olive oil, fresh herbs, and croutons.

Notes

Make ahead and store in the refrigerator. It tastes even better the next day. To reheat, add a little more cream for freshness.
