Chocolate Chip Cheesecake Bars

Delicious chocolate chip cheesecake bars that combine the flavors of chocolate chip cookies and rich cheesecake for a delightful treat.

  • 40 oz Refrigerated chocolate chip cookie dough
  • 16 oz Cream cheese, softened
  • 1 Egg
  • 1/4 cup Granulated sugar
  • 1/2 teaspoon Vanilla extract
  • 1 teaspoon Lemon juice (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Line a 9×13-inch baking dish with parchment paper.
  3. Take half of the cookie dough and press it into the bottom of the dish.
  4. In a mixing bowl, beat the cream cheese and sugar until smooth.
  5. Add the egg, vanilla extract, and optional lemon juice and mix until combined.
  6. Pour the cheesecake mixture over the cookie base.
  7. Crumble the remaining cookie dough over the cheesecake layer.
  8. Bake for 30-35 minutes until edges are golden and center is jiggly.
  9. Allow to cool for 30 minutes, then refrigerate for at least 2 hours.
  10. Slice into squares and serve.

Notes
