  • 23 fresh jalapeños, diced
  • 8 oz cream cheese
  • 45 slices of bacon, cooked until crispy
  • 4 cups chicken broth (or vegetable broth for vegetarian option)
  • 1 small onion, diced
  • 23 cloves garlic, minced
  • Salt, to taste
  • Black pepper, to taste
  • A pinch of cumin

Instructions

  1. Gather all your ingredients. Chop the onion, mince the garlic, and dice the jalapeños.
  2. Cook the bacon in a large pot over medium heat for 5-7 minutes until crispy.
  3. Add the diced onion and sauté until translucent, about 3-4 minutes. Then toss in the minced garlic and jalapeños and cook for an additional minute.
  4. Pour in the chicken broth while scraping the bottom of the pot to lift any bits of flavor that have stuck. Bring to a simmer.
  5. Stir in the shredded chicken and cream cheese, mixing until the cream cheese melts into the broth.
  6. Sprinkle in your spices—salt, pepper, and cumin. Adjust seasoning to taste.
  7. Crumble the crispy bacon and fold it into the soup, letting it simmer for another 5-10 minutes.
  8. Blend part of the soup if you prefer a creamier texture.
  9. Garnish with chopped green onions or cilantro before serving.
