Chicken Parmesan Soup

A comforting twist on the classic chicken parmesan, this Chicken Parmesan Soup is perfect for chilly evenings and quick dinners.

  • 1 pound boneless, skinless chicken breasts or thighs
  • 2 cups marinara sauce
  • 1 cup freshly grated Parmesan cheese
  • 1 cup small pasta shapes (like elbow macaroni or ditalini)
  • 4 cups low-sodium chicken broth
  • 23 cloves minced garlic
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh basil for garnish
  • Olive oil for sautéing

Instructions

  1. Sauté the aromatics: In a large pot over medium heat, pour in olive oil and add minced garlic and dried oregano, sautéing for 1-2 minutes until fragrant.
  2. Cook the chicken: Add the cut chicken, seasoning with salt and pepper, and cook for 5-7 minutes until no longer pink.
  3. Add the marinara: Pour in the marinara sauce and stir, scraping up any sticky bits from the pot.
  4. Pour in the broth: Add the chicken broth, bring to a boil, then reduce heat and let simmer for about 15 minutes.
  5. Add the pasta: Stir in the pasta and cook for 8-10 minutes until al dente.
  6. Finish with cheese: Just before serving, stir in the Parmesan cheese for a creamy texture.
  7. Garnish and enjoy: Serve in bowls topped with fresh basil and extra Parmesan.

Notes

For added richness, stir in a splash of heavy cream. Pair with garlic bread for a complete meal.
