Creamy and Comforting Loaded Baked Potato Soup

A rich and creamy soup inspired by loaded baked potatoes, perfect for warming up on chilly days.

  • 4 large Potatoes (Russet recommended)
  • 6 strips Bacon
  • 2 cups Cheddar Cheese (shredded)
  • 1 cup Sour Cream
  • 4 Green Onions (chopped)

Instructions

  1. Prepare the potatoes: Peel and chop into bite-sized cubes.
  2. Cook the bacon: In a large stockpot, cook the bacon until crispy, about 5–7 minutes, then remove.
  3. Sauté the base: Add potatoes and enough broth to cover. Bring to a boil, then simmer until tender, about 15-20 minutes.
  4. Mash it up: Use a masher to mash the potatoes directly in the pot.
  5. Add the creaminess: Stir in sour cream and shredded cheddar until melted.
  6. Bring it all together: Return bacon, stir in most green onions, and season to taste.

Notes

For an ultra-smooth soup, use an immersion blender. Adjust the consistency with broth or milk as needed.
