Creamy Spinach Chicken Soup

A warm and comforting creamy chicken soup filled with fresh spinach, perfect for chilly evenings.

  • 2 tablespoons Olive Oil
  • 1 Onion, chopped
  • 2 cloves Garlic, minced
  • 1 lb Boneless, skinless Chicken Breast or Thighs
  • 6 cups Chicken Broth
  • 4 cups Fresh Spinach
  • 1 cup Heavy Cream
  • 1/2 cup Parmesan Cheese, grated
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. Prep your ingredients by chopping your onion and mincing your garlic.
  2. Sauté the onions in olive oil over medium heat until translucent, about 5 minutes.
  3. Add the minced garlic and cook for another minute.
  4. Cook the chicken pieces with salt and pepper for 5-7 minutes until browned.
  5. Pour in the chicken broth and bring to a simmer for 15-20 minutes.
  6. Stir in the fresh spinach until wilted, about 2-3 minutes.
  7. Lower the heat and add the heavy cream, simmering for another 5 minutes.
  8. Add the Parmesan cheese and stir until melted. Adjust seasoning.
  9. Serve hot, garnished with extra Parmesan and black pepper.

Notes

Feel free to substitute with rotisserie chicken for a quicker meal. This soup can be stored in the fridge for up to three days.
