Strawberry Cheesecake Popsicles

Refreshing Strawberry Cheesecake Popsicles that combine sweet strawberries with creamy yogurt and a hint of vanilla for a nostalgic summer treat.

Ingredients

  • 3 cups strawberries (fresh or thawed if frozen)
  • 1 ½ cups plain Greek yogurt (or dairy-free yogurt)
  • 1/3 cup full-fat coconut milk (or almond/oat milk)
  • 2 tbsp maple syrup or honey (or sugar substitute)
  • 1 tsp vanilla extract (or almond extract)
  • 1/4 cup graham cracker crumbs (or gluten-free alternative)

Instructions

  1. Prepare the strawberries by rinsing and stemming them, then slice in half.
  2. Blend the half strawberries in a blender or food processor until smooth, leaving some chunks.
  3. Mix the Greek yogurt, coconut milk, maple syrup or honey, and vanilla extract in a separate bowl until creamy.
  4. Combine the blended strawberries with the creamy mixture, swirling for a marbled effect.
  5. Pour the mixture into popsicle molds and sprinkle with graham cracker crumbs.
  6. Insert sticks and freeze for at least 4-6 hours.
  7. Enjoy by running warm water over the outside of the molds and pulling on the sticks to release the popsicles.

Notes

These popsicles can last in the freezer for up to a month if stored properly. Customize with different fruits or flavor extracts as desired.
