Homemade Strawberry Ice Cream

  • 1 1/2 cups strawberries, hulled and diced
  • 2 Tbsp honey
  • 1/2 cup granulated sugar
  • 1 tsp lemon juice
  • 1 cup heavy whipping cream
  • 1/2 cup half and half
  • 1 tsp vanilla extract

Instructions

  1. Prep the strawberries by washing and hulling them. Chop into pieces.
  2. Sweeten the strawberries with honey and lemon juice, letting them sit to create a syrup.
  3. Blend two-thirds of the strawberries into a smooth purée.
  4. Mix heavy cream, half and half, sugar, and vanilla extract until well combined.
  5. Fold the strawberry purée into the cream mixture.
  6. Incorporate the remaining chopped strawberries for texture.
  7. Chill, churn, and freeze the mixture in an ice cream maker according to instructions.
  8. Scoop and serve after letting it sit at room temperature for a few minutes.
