Tuscan White Bean Soup

A hearty and comforting Tuscan soup made with white beans, spinach, and aromatic herbs, perfect for warming up on chilly evenings.

Ingredients

  • 2 tablespoons olive oil
  • 1 yellow onion, chopped
  • 3 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (15 oz) cannellini or Great Northern beans, rinsed and drained
  • 4 cups vegetable broth
  • 2 cups fresh baby spinach
  • 2 sprigs fresh thyme
  • 2 sprigs fresh rosemary
  • 2 bay leaves
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add the chopped onion and sauté until golden and translucent, about 5-7 minutes.
  3. Add the minced garlic and cook for about 1 minute until fragrant.
  4. Pour in the diced tomatoes and their juices, stirring to combine.
  5. Stir in the salt and pepper, then let simmer for 2-3 minutes.
  6. Stir in the beans and vegetable broth. Bring the mixture to a gentle simmer.
  7. Add the fresh herbs and let simmer for about 20 minutes.
  8. Stir in the spinach during the last 5 minutes of cooking, until wilted.
  9. Taste and season with additional salt and pepper if needed, then remove herb bundle.
  10. Serve hot, garnished with a drizzle of olive oil or cracked pepper.

Notes

This soup freezes beautifully. Add seasonal veggies or a splash of lemon juice for extra flavor.
