Delectable Beet Fries

A flavorful twist on classic fries using vibrant, earthy beets that are crispy and satisfying.

Ingredients

  • 2 large red or golden beets
  • 1 Tablespoon olive oil
  • 1 teaspoon harissa spice
  • 1/4 teaspoon cumin
  • Salt and pepper to taste
  • Chopped parsley (optional)
  • 2 tablespoons Parmesan (grated)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Peel and cut the beets into fry-like shapes, about 1/4-inch thick.
  3. Toss the beet fries with olive oil, harissa spice, cumin, salt, and pepper.
  4. Spread the beets on a lined baking sheet in a single layer.
  5. Roast for about 20-25 minutes, flipping at the 15-minute mark.
  6. Finish with grated Parmesan and parsley before serving.

Notes

For added flavor, experiment with different spices or serve with your favorite dipping sauce. Leftovers can be stored in an airtight container in the fridge.
