Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Mix the dry ingredients: In a large bowl, whisk together the flour, pumpkin pie spice, and baking soda.
  3. Combine the wet ingredients: In another bowl, mix the pumpkin puree, brown sugar, egg, and vanilla extract until smooth.
  4. Combine everything: Gradually fold the dry ingredients into the wet ingredients until there are no floury spots.
  5. Add oats and chocolate chips: Fold in the oats and chocolate chips.
  6. Scoop the dough onto a parchment-lined baking sheet, leaving space between each cookie.
  7. Bake for 12 to 15 minutes, or until the edges are golden brown.
  8. Cool on the baking sheet for a few minutes, then transfer to a wire rack to cool completely.
