Lemon Chicken Romano

Crispy, tender chicken kissed with bright lemon and wrapped in savory Romano cheese, perfect for cozy dinners.

  • 4 pieces boneless, skinless chicken breasts (or chicken thighs)
  • Salt and pepper, to taste
  • 1 cup all-purpose flour (can substitute with whole wheat flour)
  • 2 large eggs (can substitute with a flax egg for vegan options)
  • 1 cup grated Romano cheese (Parmesan is a good substitute)
  • 1 tablespoon lemon zest (fresh zest preferred)
  • 1/4 cup fresh lemon juice (fresh juice is best)
  • 1/2 cup chicken broth (can use vegetable broth)
  • 1/4 cup dry white wine (substitute with more chicken broth if avoiding alcohol)
  • 2 tablespoons olive oil (vegetable oil can be used)
  • 1/4 cup fresh parsley (any fresh herbs can be used)
  • 2 slices lemon (for presentation and flavor)

Instructions

  1. Prepare the chicken: Start by ensuring your chicken breasts (or thighs) are patted dry and even in thickness. If you find any uneven pieces, consider pounding them gently with a meat mallet for that perfect thickness!
  2. Season: Generously season the chicken on both sides with salt and pepper.
  3. Set up breading station: In one shallow bowl, place the flour. In another, whisk the eggs until well-beaten. In a third bowl, mix the grated Romano cheese with lemon zest.
  4. Dredge the chicken: Coat a piece of chicken in flour, shake off any excess, dip it into the egg mixture, and roll it into the cheese mixture. Press gently to ensure it sticks.
  5. Heat the pan: In a large skillet, heat the olive oil over medium heat until it shimmers.
  6. Cook the chicken: Place the coated chicken breasts in the skillet, cooking for about 4–5 minutes per side until golden brown and cooked through.
  7. Make the sauce: Remove the chicken and in the same skillet, pour in the chicken broth and white wine. Scrape the bottom of the pan and let it simmer for a few minutes.
  8. Add lemon juice: Squeeze in fresh lemon juice and stir.
  9. Return the chicken: Nestle the crispy chicken back into the pan to coat it in the sauce.
  10. Garnish and serve: Finish with fresh parsley and lemon slices. Serve warm.
