  • 3 tablespoons lime juice

Instructions

  1. Prepare the chickpeas: Start by draining and rinsing the canned chickpeas under cold water. Pat them dry with a paper towel.
  2. Chop your veggies: Prepare the red cabbage, bell pepper, carrot, cilantro, and green onions.
  3. Toss in the peanuts: Roughly chop your peanuts for that delightful crunch.
  4. Whisk the dressing: In a small bowl, combine the lime juice, soy sauce, sesame oil, and honey or maple syrup. Whisk until blended.
  5. Combine everything: In a large salad bowl, mix together the chickpeas, chopped veggies, and peanuts. Drizzle the dressing on top and toss gently.
