A refreshing and vibrant Cucumber Mint Pineapple Smoothie that’s perfect for a morning boost or a light afternoon pick-me-up.

  • 2 heaping cups (10 oz) pineapple, frozen or fresh
  • 1 heaping cup (7 oz) English cucumber, sliced
  • 1 cup (packed) fresh baby spinach
  • 1 small sweet apple (like Gala), cored and chopped
  • 1015 mint leaves (and stems)
  • 1 cup cold water
  • 46 ice cubes (if using fresh pineapple)

Instructions

  1. Prepare your ingredients. Start by washing and prepping all your ingredients. Chop the pineapple into chunks if using fresh, slice the cucumber, and core the apple.
  2. Add the base. Combine the chopped pineapple and cucumber in your blender.
  3. Toss in the spinach. Add your packed spinach to the blender.
  4. Sweeten the deal. Add the chopped apple to your blender.
  5. Minty freshness. Toss in your mint leaves.
  6. Add liquid. Pour in the cold water.
  7. Ice it up. Toss in the ice cubes.
  8. Taste and adjust. Taste your smoothie and adjust sweetness if needed.
  9. Serve it up. Pour the smoothie into tall glasses.

Notes

Garnish with fresh mint or cucumber slices for an attractive presentation.
