  • 1 Bell Pepper (Sliced)
  • 1 Onion (Sliced)
  • 1 Packet Fajita Seasoning
  • 1 Can Diced Tomatoes (Optional)
  • Tortillas (for Serving)
  • Toppings (Sour Cream, Cheese, Avocado, etc.)

Instructions

  1. Prep your chicken by patting it down and seasoning with salt and pepper.
  2. Slice your veggies—bell peppers and onion.
  3. Layer the ingredients in the crockpot starting with onion, then bell peppers, and lastly the chicken.
  4. Season everything with fajita seasoning and add diced tomatoes if using.
  5. Slow cook on low for 6-8 hours or on high for 3-4 hours.
  6. Shred the chicken after cooking and mix everything together.
