Easy Healthy Broccoli Pasta

A delightful and nutrient-packed pasta dish featuring whole wheat fusilli, fresh broccoli, and aromatic garlic, perfect for a quick weeknight dinner.

  • 340 g whole wheat fusilli pasta
  • 2 large heads broccoli, cut into bite-sized florets
  • 3 tablespoons extra virgin olive oil
  • 4 cloves garlic, minced
  • 1/2 teaspoon red pepper flakes
  • 1 tablespoon fresh lemon juice
  • 1/4 cup grated Parmesan cheese
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon ground black pepper

Instructions

  1. Cook the pasta: Bring a large pot of salted water to a boil, add the fusilli pasta, and cook until al dente (8-10 minutes). Save 1 cup of pasta water before draining.
  2. Blanch the broccoli: In the last 2-3 minutes of cooking, add broccoli florets to the pot. Drain everything and optionally run under cold water.
  3. Sauté the garlic: In the same pot, heat olive oil and sauté minced garlic and red pepper flakes for about 30 seconds until fragrant.
  4. Combine everything: Add drained pasta and broccoli back to the pot with lemon juice, salt, and pepper. Stir to coat evenly.
  5. Remove from heat and sprinkle in Parmesan cheese. Toss until the cheese melts and coats the pasta.
