Efo Riro: A Nigerian Spinach Stew

A vibrant and rich traditional Nigerian spinach stew, bursting with flavor and perfect for any evening meal.

  • 8 cups spinach (chopped)
  • 12 oz cooked meat (goat meat, chicken, beef, or tofu)
  • 2 cups mushrooms
  • ½ cup palm oil
  • 2 roma tomatoes (diced)
  • 1 red bell pepper (diced)
  • 1 habanero pepper (optional)
  • 1 onion (chopped)
  • ¼ cup water or stock
  • 2 tsp bouillon powder
  • 2 tsp cayenne pepper
  • 1 tsp black pepper
  • 2 tsp ground crayfish
  • 1 tsp pepper flakes (optional)
  • 1 tsp salt (or to taste)

Instructions

  1. Prep Your Ingredients: Rinse and chop the spinach. Chop your meat, mushrooms, tomatoes, bell pepper, onion, and peppers.
  2. Heat the Palm Oil: In a pot, heat the palm oil over medium without letting it smoke.
  3. Sauté Your Aromatics: Add chopped onions and sauté until translucent, then add bell pepper and habanero.
  4. Add the Tomatoes: Stir in diced tomatoes and a pinch of salt, cooking until softened.
  5. Incorporate the Mushrooms and Meat: Add cooked meat and mushrooms, stirring well and heating through.
  6. Season to Perfection: Add bouillon powder, cayenne, black pepper, and ground crayfish; mix and taste.
  7. Add the Spinach: Fold in chopped spinach and water or stock, allowing it to wilt down.
  8. Final Touches: Once spinach is bright green and well incorporated, remove from heat.

Notes

Let it sit for a few minutes before serving to deepen the flavors. Efo Riro pairs well with rice, fufu, or quinoa.
