Apple Cider Cheesecake

A delightful dessert that marries the warmth of fall with the creamy richness of cheesecake, featuring a graham cracker crust and sweet apple cider filling.

  • 1 ½ cups graham cracker crumbs
  • ¼ cup sugar
  • ½ cup unsalted butter, melted
  • 3 (8 oz) packages cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 cup reduced fresh apple cider
  • 1 teaspoon vanilla extract
  • 1 tablespoon all-purpose flour

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine the graham cracker crumbs, sugar, and melted butter.
  3. Press the mixture into the bottom of a 9-inch springform pan.
  4. Bake the crust for 8-10 minutes until golden brown.
  5. Beat the softened cream cheese in a large bowl until smooth and creamy.
  6. Add the granulated sugar and mix until fluffy.
  7. Incorporate the eggs, one at a time, beating well after each addition.
  8. Pour in the reduced apple cider, vanilla extract, and flour, mixing until just combined.
  9. Carefully pour the mixture over the baked crust.
  10. Bake for 50-60 minutes until the edges are set and the center is slightly jiggly.
  11. Cool the cheesecake in the oven with the door ajar for an hour.
  12. Chill in the fridge for at least 4 hours or overnight before serving.
  13. Run a knife around the edges before removing the springform pan.

Notes

For added flair, garnish with cinnamon or caramel sauce before serving.
