  • 1 large egg
  • 3/4 cup light brown sugar
  • 1/4 cup oil
  • 1/4 cup sour cream
  • 1 teaspoon vanilla extract
  • 1/2 tablespoon pumpkin pie spice
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 4 ounces cream cheese (softened)
  • 1/4 cup granulated sugar
  • 3 tablespoons all-purpose flour

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×5 inch loaf pan.
  2. Mix together the pumpkin puree, egg, light brown sugar, oil, sour cream, and vanilla extract until smooth.
  3. Combine the flour, pumpkin pie spice, baking powder, baking soda, and salt in a separate bowl.
  4. Blend the dry ingredients into the pumpkin mixture until just combined.
  5. Prepare the cream cheese filling by mixing cream cheese, granulated sugar, and flour until smooth.
  6. Assemble by pouring half of the pumpkin batter into the loaf pan, spreading the cream cheese mixture, and dolloping the remaining batter on top. Swirl gently.
  7. Bake for about 60-70 minutes, until a toothpick comes out clean.
  8. Cool for 15-20 minutes in the pan before transferring to a wire rack.
