Pumpkin Pecan Chocolate Chip Cookies

  • 1 cup Pumpkin Puree
  • 2 cups All-purpose Flour
  • 1/2 cup Brown Sugar
  • 1/4 cup Granulated Sugar
  • 1 large Egg
  • 1 teaspoon Vanilla Extract
  • 1 teaspoon Baking Soda
  • 2 teaspoons Pumpkin Pie Spice
  • 1 cup Semi-sweet Chocolate Chips
  • 1/2 cup Chopped Pecans

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine pumpkin puree, brown sugar, granulated sugar, egg, and vanilla in a mixing bowl.
  3. Whisk until smooth.
  4. Whisk together flour, baking soda, and pumpkin pie spice in another bowl.
  5. Gradually add the dry mix to the wet mix, stirring until just combined.
  6. Fold in chocolate chips and pecans.
  7. Scoop rounded tablespoonfuls onto a baking sheet lined with parchment paper.
  8. Bake for 10-12 minutes until edges are golden.
  9. Cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

For a nut-free version, omit the pecans or substitute with walnuts. You can also freeze these cookies for up to three months.
