Pumpkin Streusel Bread

A moist, flavorful Pumpkin Streusel Bread recipe perfect for fall gatherings or a sweet addition to breakfast.

  • 1¾ cups all-purpose flour
  • 1 tsp baking soda
  • ½ tsp salt
  • 2 tsp pumpkin pie spice
  • 1 cup pumpkin puree
  • ¾ cup brown sugar
  • ½ cup oil or melted butter
  • 2 eggs
  • 1 tsp vanilla extract
  • ¼ cup brown sugar (for streusel topping)
  • ¼ cup granulated sugar
  • ½ cup all-purpose flour (for streusel topping)
  • ½ tsp cinnamon
  • 4 tbsp cold butter (cubed)

Instructions

  1. Preheat the oven to 350°F (175°C) and prepare a loaf pan.
  2. Mix the dry ingredients: whisk flour, baking soda, salt, and pumpkin pie spice together.
  3. Mix the wet ingredients: whisk pumpkin puree, brown sugar, oil (or melted butter), eggs, and vanilla extract.
  4. Combine the mixtures by gently folding the wet ingredients into the dry until just combined.
  5. Prepare the streusel topping: mix brown sugar, granulated sugar, flour, cinnamon, and cubed butter until crumbly.
  6. Pour the batter into the prepared loaf pan and sprinkle with streusel topping.
  7. Bake for 55-60 minutes until a toothpick comes out clean.
  8. Cool in the pan for 10 minutes before transferring to a wire rack.

Notes

Serve warm with cream cheese spread or butter. Great for breakfast or as an afternoon snack. Can freeze for up to 2-3 months.
