  • 1 cup cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 2 tablespoons maple syrup

Instructions

  1. Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.
  2. Mix the pumpkin puree, brown sugar, and granulated sugar until well combined. Add in the vegetable oil, eggs, and vanilla extract, whisking until fully incorporated.
  3. Combine the flour, baking soda, baking powder, cinnamon, ginger, nutmeg, and salt in a separate bowl.
  4. Blend the dry mixture into the wet ingredients, stirring gently until just combined.
  5. Scoop equal portions of batter onto the prepared baking sheets, leaving about 2 inches between each.
  6. Bake for 12-15 minutes, until tops spring back when lightly pressed. Let cool on a wire rack.
  7. Make the frosting by beating together softened cream cheese and butter until creamy. Gradually add powdered sugar, blending until fluffy, then stir in maple syrup.
  8. Assemble the pies by dolloping frosting on the flat side of one cookie and topping it with another cookie.

Notes

For a lighter option, substitute vegetable oil with unsweetened applesauce. Use vegan butter and cream cheese for a dairy-free version.
