  • 2 cups milk
  • 1/2 cup sugar
  • 1/4 cup cornstarch
  • 4 large egg yolks
  • 1 teaspoon vanilla extract
  • Fresh berries (strawberries, blueberries, raspberries)
  • Cinnamon apples (optional)

Instructions

  1. Prep Your Tart Shell: If you’re using a pre-made tart shell, read the packaging for any baking instructions. If you’re making your own, roll it out and fit it into a tart pan. Prick the base with a fork and bake until golden brown. Let it cool completely.
  2. Heat the Milk: In a medium saucepan, pour in your milk and heat it over medium heat. Stir occasionally until it’s just about to simmer—tiny bubbles should form but don’t let it boil.
  3. Mix the Dry Ingredients: In a separate bowl, whisk together your sugar and cornstarch until there are no lumps.
  4. Combine the Egg Yolks: In a bowl, whisk your egg yolks until they’re pale and fluffy.
  5. Temper the Egg Yolks: Slowly pour about half of the warm milk into the egg yolks while whisking constantly.
  6. Cook the Custard: Stir this mixture over medium heat until it thickens, usually about 5-7 minutes.
  7. Chill the Custard: Transfer the custard into a bowl, cover with plastic wrap, and let it chill in the refrigerator for at least 2 hours.
  8. Assemble the Tart: Once chilled, take your tart shell and fill it with the custard. Arrange your fresh berries and optional cinnamon apples on top.
  9. Serve and Enjoy: Slice your tart and serve it cold.
