Garlic Herb Roasted Potatoes and Veggies

A simple and flavorful side dish featuring crispy baby potatoes and colorful veggies roasted with garlic and herbs.

  • 2 cups Mixed Vegetables (e.g., bell peppers, carrots, zucchini)
  • 3 tbsp Olive Oil
  • 4 cloves Garlic (minced)
  • 1 tbsp Herbs (e.g., rosemary, thyme, parsley)
  • 1 tsp Salt
  • 1/2 tsp Pepper

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Prepare the baby potatoes by rinsing and cutting larger ones in half.
  3. Chop your mixed veggies into bite-sized chunks.
  4. Toss the potatoes and veggies in a large bowl with olive oil, minced garlic, herbs, salt, and pepper.
  5. Arrange the mixture in a single layer on a baking sheet lined with parchment paper.
  6. Roast in the oven for 25-30 minutes, stirring halfway through.
  7. Garnish with extra fresh herbs before serving.

Notes

Ensure uniform size for even cooking. You can prep the veggies ahead of time and store them in water.
