  • 1 lb boneless, skinless chicken breasts
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 2 teaspoons dried oregano
  • Salt and pepper to taste
  • 2 cups cooked rice or quinoa
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, thinly sliced
  • 1/2 cup feta cheese, crumbled
  • 1/2 cup Greek yogurt
  • 1 clove garlic, minced
  • 1 tablespoon fresh dill, chopped
  • Salt to taste

Instructions

  1. Marinate the chicken: In a mixing bowl, combine olive oil, lemon juice, oregano, salt, and pepper. Whisk until blended. Add the chicken and coat well. Let marinate for at least 30 minutes.
  2. Cook the chicken: Heat a grill pan or skillet over medium-high heat. Cook the marinated chicken for 6–7 minutes on each side until golden brown and the internal temperature reaches 165°F.
  3. Prep the rice or quinoa: Cook according to package instructions until fluffy.
  4. Chop the veggies: Dice the cucumber, halve the cherry tomatoes, and slice the red onion.
  5. Mix the Greek yogurt sauce: Combine Greek yogurt, garlic, dill, and a pinch of salt in a small bowl and stir until creamy.
  6. Slice the chicken: Remove from heat, let rest, then slice into strips.
  7. Assemble your bowls: Start with a scoop of rice or quinoa, layer with chicken, veggies, feta, and drizzle with the yogurt sauce.

Notes

Serve with warm pita bread and consider adding some olives for extra flavor.
