Grilled Zucchini with Goat Cheese, Basil & Honey

  • Salt, to taste
  • 1 Tbsp olive oil or avocado oil
  • 1/3 cup goat cheese, crumbled
  • 2 Tbsp fresh basil, chopped
  • 1.5 Tbsp honey
  • Pepper, to taste

Instructions

  1. Prepare Your Zucchini: Wash zucchinis, pat dry, and cut into thick slices (about ½ inch).
  2. Season the Zucchini: Toss zucchini slices with olive oil and salt.
  3. Preheat the Grill: Fire up your grill to medium-high heat.
  4. Grill Your Zucchini: Place zucchini on the grill and cook for 3-4 minutes per side.
  5. Prep the Toppings: Crumble goat cheese and chop fresh basil.
  6. Assemble the Dish: Transfer zucchini to a platter, top with goat cheese and drizzle with honey.
