  • 1 lb lean ground beef (80/20 or 90/10 blend)
  • 2 tbsp tomato paste
  • 1/4 cup beef broth (or water)
  • 1 tbsp taco seasoning
  • 4 large flour tortillas (10-inch tortillas)
  • 1.5 cups bright orange cheddar cheese (freshly grated)
  • 1.5 cups white Monterey Jack cheese (freshly grated)
  • 1 tbsp vegetable oil (or butter, for pan-toasting)
  • 2 tbsp fresh green cilantro (finely chopped, for garnish)
  • 1/2 cup smooth white sour cream (for dipping)

Instructions

  1. Brown the beef by adding it to a large skillet over medium heat, breaking it up with a wooden spoon. Cook for about 5-7 minutes until fully browned.
  2. Add 2 tablespoons of tomato paste and 1 tablespoon of taco seasoning, cooking for a couple more minutes.
  3. Incorporate 1/4 cup of beef broth (or water) and stir to combine. Let simmer for about 2 minutes.
  4. Prepare your cheese by grating cheddar and Monterey Jack. Lay out your tortillas ready to be filled.
  5. Assemble each quesadilla by sprinkling cheese on half, adding beef mixture, topping with more cheese, and folding.
  6. Pan-toast in a heated skillet with vegetable oil or butter, cooking for about 3-4 minutes on each side until golden-brown.
  7. Slice the quesadillas into wedges and serve with cilantro and sour cream.

Notes

To keep quesadillas warm, place them in a low oven while cooking the rest. For additional flavor, try adding jalapeños or your favorite veggies.
