Halloween Jack-O’-Lantern Peppers

Celebrate Halloween with these delightful and decorative Jack-O’-Lantern Peppers, packed with nutritious ingredients and fun flavors.

Ingredients

  • 4 orange bell peppers
  • 1 cup cooked rice
  • 1 cup black beans, drained and rinsed
  • 1 cup corn
  • 1 cup diced tomatoes
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Cheddar cheese, shredded (optional)
  • Olive oil

Instructions

  1. Preheat your oven to 375°F (190°C) and prepare the peppers.
  2. Slice the tops off the orange bell peppers and scoop out the seeds.
  3. Combine rice, black beans, corn, diced tomatoes, chili powder, cumin, salt, and pepper in a mixing bowl.
  4. Stuff each carved pepper with the filling.
  5. Drizzle olive oil over stuffed peppers and bake for about 30 minutes covered, then bake uncovered for an additional 10-15 minutes.
  6. Broil for a couple of minutes if desired to make cheese bubbly.

Notes

You can prepare the filling a day ahead of time, and feel free to use any bell pepper color.
