Harry Potter Butterbeer Cookies

  • 1/2 cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 teaspoon butterscotch flavoring
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup butterscotch chips
  • 1/2 cup unsalted butter, softened (for frosting)
  • 2 cups powdered sugar
  • 3 tablespoons butterscotch sauce

Instructions

  1. Preheat the oven: Preheat your oven to 350°F (175°C) and line a couple of baking sheets with parchment paper.
  2. Cream the butter and sugars: In a large mixing bowl, add the softened butter, brown sugar, and granulated sugar. Cream until smooth and fluffy, about 2-3 minutes.
  3. Add the eggs and extracts: Mix in the eggs one at a time, incorporating vanilla extract and butterscotch flavoring.
  4. Mix the dry ingredients: In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add to the wet mixture, mixing just until combined.
  5. Stir in the butterscotch chips: Fold in the butterscotch chips gently.
  6. Scoop the dough: Using a cookie scoop or tablespoon, place even amounts of dough on the prepared baking sheets.
  7. Bake: Bake for 10-12 minutes, until edges are lightly golden.
  8. Cool on a wire rack: Let them sit on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
  9. Make the frosting: Whip the softened butter until creamy. Gradually add powdered sugar and then mix in the butterscotch sauce.
  10. Frost and drizzle: Once cool, frost each cookie and drizzle with butterbeer caramel sauce.

Notes

These cookies can be stored in an airtight container at room temperature for up to a week. For longer storage, freeze the dough or baked cookies.
