Harvest Chicken Salad

A delightful fall-inspired salad featuring tender chicken, crunchy apples, and nutty pecans, all dressed in a light vinaigrette.

Ingredients

  • Chicken (grilled or roasted, boneless, skinless breast)
  • Mixed greens (baby spinach, arugula, romaine)
  • Apples (sliced, preferably Granny Smith, Fuji or Honeycrisp)
  • Pecans (toasted)
  • Cranberries (dried)
  • Vinaigrette (olive oil, balsamic vinegar, Dijon mustard, honey)

Instructions

  1. Cook the chicken by seasoning with salt, pepper, and herbs, then sauté or roast until cooked through.
  2. Let the chicken rest after cooking for 5 minutes.
  3. Prepare the greens in a large bowl.
  4. Slice the rested chicken into bite-sized pieces.
  5. Add sliced apples, toasted pecans, and dried cranberries to the greens.
  6. Make the vinaigrette by mixing olive oil, balsamic vinegar, Dijon mustard, and honey.
  7. Toss all ingredients together until well combined.
  8. Serve with sliced chicken on top and optional extra pecans or cranberries.

Notes

Serve in a large bowl for a beautiful presentation. Consider adding feta or goat cheese for additional flavor.
