Harvest Vegetable Soup

A vibrant medley of fresh vegetables simmered into a comforting soup that warms your soul.

Ingredients

  • 1 medium butternut squash
  • 3 medium carrots
  • 2 cups kale, chopped
  • 3 ripe tomatoes, diced
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • Salt and pepper to taste
  • Drizzle of olive oil

Instructions

  1. Prep your veggies: Peel and chop the butternut squash and carrots into bite-sized cubes. Rinse and chop the kale into manageable pieces.
  2. Sauté the aromatics: In a large pot, heat a drizzle of olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Then, throw in the minced garlic and cook for another minute until fragrant.
  3. Add the veggies: Toss in the carrots and butternut squash. Stir them around and let them mingle with the onion and garlic for about 5 minutes.
  4. Tomatoes and broth come next: Add the tomatoes and stir until they start to break down, about 2-3 minutes. Pour in the vegetable broth and bring to a simmer.
  5. Reduce the heat to low, cover, and let it all simmer for about 15-20 minutes until the squash and carrots are fork-tender.
  6. Add in the kale: Stir the kale until it’s wilted. Cook for an additional 5 minutes.
  7. Taste test: Adjust the seasoning if needed.
  8. Serve hot: Ladle the soup into bowls and enjoy!
