Apple Carrot Bread

A delightful loaf combining the flavors of carrots and apples, perfect for breakfast or as a sweet snack.

  • 1 cup grated carrots
  • 1 cup applesauce or grated apples
  • 1 cup sugar
  • 2 eggs
  • 1/2 cup vegetable oil
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 1/2 tsp salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare a 9×5-inch loaf pan by greasing it or lining with parchment paper.
  3. Mix the sugar and eggs in a large bowl until smooth, then gradually whisk in the vegetable oil and applesauce.
  4. Incorporate the grated apples and carrots into the wet ingredients.
  5. Combine the flour, baking soda, baking powder, cinnamon, and salt in another bowl.
  6. Merge the dry ingredients into the wet ingredients until just combined.
  7. Pour the batter into the prepared loaf pan.
  8. Bake for 50–60 minutes until a toothpick comes out clean.
  9. Cool in the pan for 10 minutes, then remove and let cool on a wire rack.

Notes

For a richer flavor, consider browning the butter before mixing it into the wet ingredients. You can also add nuts or chocolate chips on top before baking for texture.
