Cowboy Caviar

A refreshing and vibrant dip packed with colorful veggies, protein-rich beans, and a zesty dressing.

Ingredients

  • 15.5 oz black beans (drained and rinsed)
  • 15.5 oz black-eyed peas (drained and rinsed)
  • 15 oz sweet corn (drained)
  • 1 cup cilantro (chopped)
  • 0.5 cup red bell pepper (chopped)
  • 0.5 cup orange bell pepper (chopped)
  • 0.5 cup red onions (diced)
  • 1 tsp chili powder
  • 0.5 tsp kosher salt
  • 0.25 cup sugar
  • 0.5 cup olive oil
  • 0.33 cup white wine vinegar
  • 1 tbsp fresh lime juice
  • 0.25 tsp garlic powder

Instructions

  1. Prep your ingredients by finely chopping the bell peppers and onions and chopping the cilantro.
  2. Drain and rinse the beans in a colander to remove excess sodium.
  3. Combine the black beans, black-eyed peas, corn, cilantro, bell peppers, and onion in a large mixing bowl.
  4. Mix the dressing ingredients in a separate small bowl until well blended.
  5. Dress the bean and veggie mixture with the dressing and combine gently.
  6. Taste and adjust seasoning as needed.
  7. Let it rest in the fridge for at least 30 minutes before serving.

Notes

Cowboy Caviar can be made a day in advance and stored in an airtight container. It stays fresh for 3-5 days in the refrigerator.
