Healthy Mediterranean Couscous Salad

A vibrant and nutritious salad featuring couscous, colorful veggies, and a zesty dressing, perfect for summer gatherings.

Ingredients

  • 1 cup couscous
  • 1 1/4 cups water
  • 1/2 cup cherry tomatoes, halved
  • 1/2 cucumber, diced
  • 1/4 red onion, finely chopped
  • 1/2 cup kalamata olives, pitted and sliced
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup fresh parsley, chopped
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste

Instructions

  1. Bring 1 1/4 cups of water to a boil in a medium saucepan. Stir in 1 cup of couscous, cover, and remove from heat. Let it sit for about 5 minutes until it absorbs the water. Fluff with a fork.
  2. Chop your cherry tomatoes, cucumber, red onion, and parsley into similar-sized pieces.
  3. Whisk together the olive oil, lemon juice, salt, and pepper in a small bowl.
  4. Combine the fluffed couscous, chopped veggies, diced olives, feta cheese, and the dressing in a large mixing bowl. Gently fold everything together.
  5. Cover the salad and refrigerate for at least 30 minutes before serving. Toss gently before serving.

Notes

For best results, refrigerate to allow flavors to meld. Feel free to adjust seasonings to your taste.
