Baked Zucchini Casserole

A hearty and comforting casserole layered with fresh zucchini, creamy goodness, and melted cheese.

  • 4 medium zucchinis
  • 1 cup shredded cheese
  • 1 cup cream or sour cream
  • 1/2 cup breadcrumbs (optional)
  • 2 cloves garlic, minced
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Olive oil for greasing
  • Fresh herbs (like basil or parsley) for garnish

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Prepare zucchinis by slicing them into rounds about 1/4 inch thick.
  3. Salt the zucchini slices lightly and let them sit for about 10 minutes.
  4. Mix the cream (or sour cream), minced garlic, onion powder, salt, and pepper in a mixing bowl.
  5. Layer a greased baking dish with zucchini slices, creamy mixture, and cheese, repeating until all ingredients are used.
  6. Sprinkle breadcrumbs on top if using for added texture.
  7. Bake covered for 25 minutes, then remove the foil and bake for an additional 15-20 minutes until bubbly and golden brown.
  8. Cool for 5-10 minutes before serving.

Notes

Feel free to customize with sundried tomatoes, ground meats, or different cheeses.
