Healthy Strawberry Crumble

A delightful and wholesome dessert featuring fresh strawberries wrapped in a warm, buttery crumble topping.

  • 6 cups fresh or frozen strawberries, hulled and halved or quartered
  • 2 Tablespoons coconut sugar (or brown sugar)
  • 1 Tablespoon fresh lemon juice
  • ¼ teaspoon lemon zest
  • ½ teaspoon vanilla extract
  • 2 Tablespoons cornstarch (or arrowroot/tapioca starch)
  • 1 cup old-fashioned rolled oats
  • ⅔ cup oat flour
  • ½ cup walnuts, chopped (optional)
  • ¼ cup coconut sugar (or light brown sugar)
  • ½ teaspoon salt
  • ½ teaspoon ground cinnamon
  • ⅓ cup melted coconut oil (or melted unsalted butter)
  • ¼ cup pure maple syrup
  • 1 teaspoon pure vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C). Wash and hull strawberries, then chop if necessary.
  2. Combine strawberries, coconut sugar, lemon juice, zest, vanilla extract, and cornstarch in a bowl.
  3. Mix until strawberries are evenly coated and let sit.
  4. In another bowl, combine rolled oats, oat flour, walnuts, coconut sugar, salt, cinnamon, and melted coconut oil.
  5. Pour in the maple syrup and vanilla extract, mixing until crumbly.
  6. Spread the strawberry mixture in a greased 9×13-inch baking dish.
  7. Sprinkle the crumble topping over the strawberries.
  8. Bake for 30-35 minutes, until topping is golden brown.
  9. Cool for 10-15 minutes before serving.

Notes

Serve with Greek yogurt or vanilla ice cream for a delightful contrast.
